The distillery started up well after its downtime over Christmas and we also managed to get a little maintenance done. It’s always better to do preventative and proactive maintenance rather than reactive as you can guarantee that things will stop, break, fall apart at the time when you don’t want them to.
I am probably tempting fate with this, but the winter weather has been very favourable so far and long may it continue. An old farmer friend assures me it’s going to be a wet February and March, so we will take that. There’s nothing worse than trying to defrost frozen process pipes.
On the cask front, we have two deliveries coming in very soon from our good friends at Casknolia, with an excellent array of Oloroso, Pedro Ximiniez and Palo Cortado Butts and Hoggies from two very well respected family bodegas in Jerez. Some people are lucky enough to be getting a private cask filled with one of these beauties.
Now is also a busy time for sampling as we work out what will be ready to bottle this year, and that already looks exciting. Once again the team is off and running at a pace, with lots of new things on the horizon.
