Barley Field Lindores Abbey

The distillery is back in full swing – and our spirit is on point. What more could you ask for?

Well the honest answer is – rain! Yes that substance that falls from the sky that we all complain about is severely lacking just now. Our SUDS pond is dry and a few of the Fife and Perthshire reservoirs are almost empty. We are fortunate we still have our borehole; but even then the water coming up from the strata is at a temperature where we have to slooooow things down to hit the desired temperatures for the process. No doubt as we get through September, though, our prayers will be answered!

At the moment we are on a 5 mash week, at present filling 28-32 barrels depending on cask size. There’s a lot of STR being racked back as we try to maintain our filling program. This is never an easy thing to do as you try to ensure you have casks available for short , medium and long term maturation.

We are at any given time looking forward 25 years; the filling program is generated by forecasted sales volumes alongside what we hope to bottle. Will it be bourbon, will it be sherry, will it be a wine finish? It really is an art – in some ways it feels like guesswork! But with some science added to experience and data contributing we can make an informed decision. 

We have acquired a new barley / malt from our friends at the Crafty Maltsters. This barley is rather special as it has not been grown in Fife for decades, perhaps even centuries. This could be another ‘first for Fife’, and is something that the team are looking forward to. It will in fact take us back to the time of the monks – but this is a 2022 project, so we and you will just have to be patient!

The reports back from the farmers who supply our local barley is looking very encouraging as we seem to have had an excellent year for growing high quality, high growth barley. Harvest yields have been at the top of the scale.

Lastly, we have some new bottlings on the horizon, with more details to follow soon. This is taking a little longer than expected as we are still dealing with the challenges of COVID and Brexit. Nevertheless we push on. But please be patient, all good things come to those that wait and this is especially true of what we have planned!
