We at Lindores Abbey Distillery are a close-knit team, and each and every member has a key role (sometimes more than one!) to play in the production of our whisky, the creation of our events, the marketing of our brand and the smooth running of the business.

Lorena Baez Subiabre is one of our multi-talented team – today we are learning a little more about her time at Lindores and how she switched the kitchen for the still room.

How did you end up working the whisky industry, Lorena?

I have a scientific background, and studied to be a Food Science Engineer. For me, having the chance to be involved in the production of whisky and the sensory analysis of Scotch whisky was a long-held dream. I have lived in Newburgh for the past 11 years, having grown up and started my family in Chile. I was a full-time mum initially, but when the children had grown up, the distillery was just being built and it seemed like a great opportunity for me. In September 2017, I joined the team and have been here ever since.

What is your role at Lindores?

I am a Research and Development Assistant, working as a blender and a production co-ordinator. I am a member of the sensory panel which is how we chose the perfect blend for our single malt scotch whiskies.

What is your favourite aspect of working in the whisky industry?

I love having the opportunity to develop new formulations and play with the flavours to create a good dram. Time, patience and creativity are all incredibly important, and they are what I like to bring to my role at Lindores every day.

Do you think there are barriers to people working in the whisky industry, particularly women?

In general, my experience in the whisky industry is very positive. However, some people still perceive whisky as being very much a man’s drink. Sometimes people ask me ‘you don’t actually drink the whisky, do you?’ even though I am part of the team creating it! I think the perception of consumers are changing and soon hopefully everyone will realise that a dram can be a favourite drink for anyone, regardless of gender.

What has been a career highlight for you?

My career highlight is without doubt having had the opportunity to be part of the formulation of MCDXCIV Lindores Single Malt Whisky. It makes me immensely proud, especially the positive feedback that we have had from people who have tried it across the world. We put a lot of hard work in to the production, and it is amazing to see people enjoying it now.

What is your favourite dram (apart from anything from Lindores!)

I like peated whisky like Ardbeg and Talisker, but I think that aromas and flavours are connected with experiences and feelings. For that reason, Highland Park 12 Year Old is a classic for me as it reminds me of the lovely time that we, as a family, lived in Orkney. The smooth texture, floral notes, touch of sweetness and long peppery finish works for me.

Who would you most like to share a dram with?

Of course, with my loved ones and my family.
